We all love pumpkin pie recipes, but this one happens to double as a nutritional powerhouse.

If the thought of getting your child to eat spinach or squash sounds nearly impossible, think again. Here is a cold-weather smoothie that my oldest very affectionately (and often with much squealing and jumping) called “Pumpkin Pie Shake” as a toddler.

The nutritional stats reveal that secretly disguised in creamy cinnamon goodness are all of the vitamins and minerals kids (and adults) need. Your children will be as happy as you are… but likely for completely different reasons.

Even if you're looking for one of the traditional pumpkin pie recipes on the web, and stumbled upon this creation, I hope that you'll find the time to treat yourself to a Pumpkin Pie Smoothie. It's way easier to make than a homemade pumpkin pie, but it has all the creamy, spicy goodness of the season.

Let me put it simply:

So grab your blender and try it. You may have a new autumn ritual...

Tip: I put half in a kiddie cup with a lid and straw, and half in my big morning mug... just in case one of my kids decides to have an aversion to anything green that day.


This recipe is

    VEGAN

    VEGETARIAN

    WHOLE FOODS

Ingredients

1 medium banana

1 cup 2% milk

½ cup canned pumpkin

1 handful (1oz+) fresh baby spinach

2 tbsp almond butter

2 tbsp flax oil (optional)

1 tsp cinnamon

½ tsp vanilla extract

couple dashes nutmeg (optional)

3-4 ice cubes

Directions

Combine all ingredients in a blender. Blend until smooth. Serve into two glasses. Garnish with a sprinkle of cinnamon.

Makes 2 1-1/2 cup servings. Doubles easily.

The nutritional information provided is for the ingredient list given, but this recipe works just as well with whole milk, or milk substitutes.

You can use any nut butter, although my family of taste-testers unanimously prefers almond butter.
