Healthy Summer Recipes: Strawberry-Nut Frozen Treat
This is one of several healthy summer recipes we have in our home... and it is by far, the favorite. Probably because it features none other than the ever-so-popular STRAWBERRY. That rhyme about screaming may be for ice cream, but in my house, we scream for strawberries! My children will eat this over ice cream any day.
In addition to the nutrition that strawberries bring to this frozen treat, the nuts and seeds are really what make it so very healthy. It includes almonds, sunflower seeds, walnuts, brazil nuts, and pumpkin seeds - all part of the

If you find yourself without some of the ingredients, you can substitute non-raw varieties of the nuts and seeds. If you still don't have them all, you can substitute roughly equivalent measures of almonds, peanuts or cashews... just be sure that they are unsalted. This substitution will affect the nutritional value a bit, but the treat will still stand as a healthy alternative to ice cream.

Ingredients
1 1/2 cups frozen strawberries (or peaches or other berries)
1 cup raw almonds, soaked overnight
1/2 cup maple syrup
1/3 cup raw walnuts
1/4 cup raw sunflower seeds, soaked overnight
1/4 cup raw pumpkin seeds, soaked overnight
6 raw brazil nuts, soaked overnight
3/4 tsp ground cinnamon
1/4 tsp non-alcoholic vanilla extract
1/4+ cup water
Directions
Combine all ingredients in a food processor. Blend until smooth and creamy. Add more maple syrup and water to adjust taste and consistency.
Serves 4.
