Healthy Snack Recipes for Kids: Chocolate Pudding
Finding healthy snack recipes for kids is something that seems to be on every mother's to-do list.
Because our family typically eats only healthy foods, most days, my kids are awesome eaters... broccoli, squash, sweet potatoes, chicken, beef, soups... they'll eat it all.
But then other days their sweet tooth is (literally) screaming for satisfaction.
On the days when an apple with almond butter just won't cut-it at snack time, I whip out this to-die-for chocolate pudding. Of course I build it up like it's a decadent, indulgent treat so they feel really lucky. In reality, it's the best way I know to get my picky 3 year old a good serving of healthy avocados.

Ingredients
2 whole avocados, pit and skin removed
20 soaked dried dates
1/2 c cocoa powder
1 tsp alcohol-free vanilla extract
approx 1/2 c date soak-water
DirectionsCombine all ingredients except water in a food processor. Blend until smooth. Drizzle in water in small quantities until the desired consistency is reached.
Serves 4.
Serving suggestion: Serve with fresh fruit like strawberries or banana slices.
