Healthy dessert recipes sounds a bit like an oxymoron to some, but I promise, it can be done.
Talk of healthy desert recipes leaves a lot of people thinking of a fruit plate or a single bran cookie. Stop that! I'm talking rich, decadent peanut butter mousse with a chocolate "cookie" crumble.
Think peanut butter whipped cream with crushed oreos.
Now, think of that, without any guilt. Imagine it nourishing your body instead of leaving you with a depressing sugar-low in a couple hours.
Now, all that's left is the obvious: Head to the kitchen a whip up some of this easy dessert. I know I'm planning on having this tonight at our house.
This recipe boasts healthy fats from chia and coconut milk. It also includes plenty of protein from peanut butter and chia seeds, along with some iron and minerals. There's no added sugar - just some dates in the cookie crumble, and vanilla stevia. Have I convinced you?

Ingredients
Crumble:
½ c raw almonds, cashews, macadamias, or favorite nut
½ c dried, pitted dates
2 Tbsp coconut oil, melted
1 heaping Tbsp cocoa powder
Mousse:
½ - 1 c peanut butter
Directions
In a food processor, blend all crumble ingredients until the texture of crumbs. In a separate bowl, mix chia pudding and peanut butter together well. Add as much peanut butter as needed to suit your taste. Portion peanut butter pudding into 4 bowls and top each with approximately ¼ c crumble mixture.
Alternatively, press the crumble mixture into a small pie plate to create a crust, and fill with peanut butter pudding to make a creamy pie. Reserve a bit of the crumbles to garnish the top of the pie.
Or, layer crumbles and pudding in parfait glasses for a nice presentation. You can include layers of the chocolate chia pudding, too!
The cookie crumbles or pie crust work well with the banana pudding, too (look up at the vanilla chia pudding recipe for that variation.)
Serves at least 4.
